Today, we’re making Whipped Goat Cheese with Strawberry Sauce!
It’s Day 6 in our 12 Days of Cheese series, and today we are making the easiest showstopper of a recipe that there could possibly be!
Whether you’re entertaining pop in guests, need a dish to take to a last minute invite, or just want to add something simple and beautiful to your table, this recipe is it. You can toss this together in 20 minutes or less, and that makes it the perfect entertaining treat!
Let’s start with the strawberry sauce. We’re basically making a stovetop version of my roasted strawberries to help speed up the process. So to a saucepan, we’ll add some fresh diced strawberries, some balsamic vinegar, a little brown sugar, and a splash of water. Give it all a good mix, bring it to a simmer, mash the berries to a consistency you like, and simmer the berries for about 10 minutes until they transform into a thick and syrupy sauce. That’s it! We need the berries to cool completely before we add them to our goat cheese, but you can always help that along by tossing them in the freezer for a few minutes if you need to act fast.
While our berries are cooling, we can whip our goat cheese. We simply need some goat cheese, a little cream cheese, and a sprinkle of freshly shredded parmesan cheese. Now, it does help for the cheeses to be room temperature. They will blend together much more smoothly than trying to blend cold cheese. But if you have the time to let the cheeses sit out for even 30 mins, it’ll be worth it. We’ll toss the cheeses in the food processor, give it a whirl, and blend the mix just until it’s smooth and creamy.
To assemble, we’ll schmear our whipped goat cheese onto a serving plate, top it with our strawberry sauce, then finish it with a sprinkle of chopped pistachios. Serve this with some toasted crostini on the side, and you’re ready to dig in.
The texture of this whipped goat cheese is like frosting. It’s light and fluffy and sooooo creamy, and that’s thanks to the little extra boost we get from the cream cheese. The combined bite of the tangy goat cheese, the sweet and tangy berries, the pop of salty pistachio, and the lightly toasted baguette is an absolute dream. The first time I made this, I had to beg the bestie to come and get it so I didn’t devour the whole plate.
Though if I had devoured the whole plate, I could’ve easily whipped up a second batch and nobody would’ve ever known!

Whipped Goat Cheese with Strawberry Sauce
Serves: 4 Print
Ingredients:
1 cup strawberries, diced
1 tsp balsamic vinegar
1 tbsp brown sugar
1 tbsp water
8 oz goat cheese, softened to room temperature
2 oz cream cheese, softened to room temperature
1 tbsp shredded parmesan cheese
1 tbsp lightly salted pistachios, chopped
Crostini, for serving
Directions:
Add strawberries, balsamic, brown sugar, and water to a small saucepan. Toss to combine. Bring to a simmer over medium high heat. Once the berries start to simmer, use the back of a spoon or potato masher to mash the berries to your desired texture. Simmer the berries for 8-10 minutes until slightly thickened, stirring occasionally. Remove from heat, and cool completely.
To the bowl of a food processor, add goat cheese, cream cheese, and parmesan. Process until fully combined and smooth.
Spread goat cheese mixture all over a serving plate. Top with berry sauce and chopped pistachios. Serve with crostini, and enjoy!
Recipe notes:*To easily make crostini, slice a baguette into ½ inch slices. Arrange on a baking sheet, drizzle with olive oil, and bake at 400 degrees for 7-10 minutes until lightly golden.
