Peppermint Bark Mousse Shooters- These 3 ingredient desserts are the perfect size for an after dinner sweet treat.

Today, we’re making Peppermint Bark Mousse Shooters!

 



I’m really doubling down on the holiday recipes this year. Are you guys loving it?!? We started with 12 days of cheese, and we’re finishing the month with two super duper simple yet festive desserts that anyone can make. No skill, effort, stress, or worry required!

 



First up are these absolutely adorable, 3 ingredient handheld desserts. I don’t know about you, but I overstuff myself when it comes to the holiday dessert table. I feast and feast on all of the delicious components of the main event, but I simply can’t bare to let the desserts pass me by. I will cram cookies and pie into my mouth if it’s the last thing I do, and I regret it every time.

 



We’re solving this problem today by turning our festive dessert into a mini, handheld work of art. I made these for a work party a couple weeks ago, and everyone agreed it was the perfect amount to satisfy the sweet tooth without feeling like they were going to pop.

 



These cute little babes start with some chocolate instant pudding mix. Then, instead of using milk to whip up our pudding, we’re going to use a peppermint mocha flavored coffee creamer. (Yes, you just saw this same technique with our gingerbread pudding pie!) We’ll whisk the creamer into the pudding mix until it’s fully combined. Don’t be alarmed that the mixture is thin. Give it about 5 minutes to rest, and it will thicken up ever so slightly.

 



Next, we’ll take a tub of cool whip and whisk half of it right into our pudding mix. We’re only going to start with half of the cool whip, because we want to lighten up the pudding a little bit. Once that’s all mixed in, we’ll gently fold in the remaining cool whip. This is what makes our pudding become light and fluffy like a beautiful mousse.

 



I like to present this mousse in little shot glasses so that they are easy to both transport and enjoy. I used 2 oz disposable shot glasses for even easier clean up, but you could of course use glass ones as well. You could also serve these in larger portions if you don’t need to stretch this mixture as far. You have options! Either way, I like to transfer the mousse to a piping bag so it’s a little cleaner to fill the shot glasses, but do whatever is easiest for you.

 



We want to transfer these to the fridge for a couple hours to let them set, but that’s really all the work we have to do. When we’re ready to serve, we’ll garnish our glasses with some Christmas sprinkles and a hunk of store bought peppermint bark, and they’re ready to enjoy!

 



These little mousse cups have the perfect balance of chocolate to mint. They’re not overpowering on either flavor profile. They’re light, they’re fluffy, and they are such a satisfying little sweet treat that won’t tip you over the edge of fullness.

 

Okie dokes…is anyone else 70% cheese and 30% chocolate yet? I love the holiday season, but man am I looking forward to a green vegetable. I say that as I tell you we have one more recipe to go for 2024, and it’s another 3 ingredient dessert!

Peppermint Bark Mousse Shooters

Serves: 24           Print


Ingredients:

  • 1 box (3.9 oz) instant chocolate pudding

  • 1 ¼ cup peppermint mocha coffee creamer

  • 8 oz cool whip, thawed

  • Sprinkles and peppermint bark, for garnish


Directions:

  1. To a mixing bowl, add pudding mix and coffee creamer. Whisk well until completely combined. Allow to sit for 5 minutes to start to thicken. 

  2. Whisk in half of the cool whip until completely combined and lightened in color. Add remaining cool whip, and gently fold in until completely combined.

  3. Evenly divide mixture between 24 2oz shot glasses. Chill for at least 2 hours.

  4. To serve, garnish with holiday sprinkles and a piece of peppermint bark. Enjoy!

Recipe notes:

*I like to transfer the mousse mixture to a piping bag to easily fill the shot glasses. It makes the job go very quickly.

*For easy serving and clean up, I like to serve these in disposable shot glasses with mini spoons.

*My holiday sprinkles came from Fancy Sprinkles. Here is a similar blend.
