Cookie Butter S'mores Dip- Enjoy summer's favorite dessert without the campfire in this dip with a twist. The addition of white chocolate and cookie butter make for a unique and deliciously sweet bite.

I've never had much of a sweet tooth.
My cravings have always tended to skew to the salty side. It's not that I don't like sweets, but they've just never been my go to bite.
Until recently.
My sweet tooth has intensified big time over the past few months of quarantine. I mean, my taste for EVERYTHING has intensified while being stuck at home stress eating all day long. But, my desire for sweets is like it's never been before.
But, since I'm trying to be intentional about not buying too many sweet treats at the grocery store and not going grocery shopping as often as I'd like, there have been definite moments when I've been dying for something sweet while not having a bite of anything in the house to satisfy the craving. I always have baking supplies in the house though, so I may or may not have opened up a bag of chocolate chips and shoveled them in my mouth on a couple of occasions.
One night over the summer, I couldn't function because my sweet craving was so out of control. And chocolate chips didn't do it for me. So I scraped some ingredients together, and that was the night that my single serve s'mores dip was born.
Well, today's recipe is the full size version of the sweet treat that's basically gotten me through 2020.
So today, we're making Cookie Butter S'mores Dip!
Here's the good news. We don't need warm weather or a campfire to enjoy the joyous taste of an ooey gooey s'more. And, this dip is proof of that! But, we're changing the flavor profile up to make a unique and delicious treat that's perfect for any sweet tooth.
I love the combination of cookie butter and white chocolate, so the base of our s'mores dip is actually going to be white chocolate. Then, we'll add in some semisweet chocolate and some dollops of cookie butter all over the white chocolate in our baking dish . Now, white chocolate is VERY sweet, so if your sweet tooth has limits, feel free to flip flop the chocolate ratios in this dip to use more semisweet chocolate to less white chocolate. The dip is delicious either way.
Once we have our chocolate and cookie butter in our baking dish, we need to top our dip with marshmallows. The marshmallows sit better if they're cut in half first, so I like to use clean kitchen shears to easily halve the marshmallows. Arrange them over the top of the chips, and the dip is ready for the oven!
Our s'mores dip only needs 7 or 8 minutes in the oven until the tops of the marshmallows become nice and golden. And, that's it! Our dip is ready to dive in. The semisweet chocolate and cookie butter become melty and creamy in the oven. The white chocolate doesn't fully melt down and keeps a little bit of texture that adds a nice little bite to the dip. And, the marshmallows are gooey in the center and caramelized on the outside as if we just pulled them out of the fire. Serve the dip with some graham crackers or shortbread cookies, and you've got a super fun, super delicious, super sweet treat!
The flavors of this dip are so far beyond your standard s'more. The cookie butter has a warmly spiced taste to it while the white chocolate is cooling and sweet, and the semisweet chocolate adds a nice contrast to both. This is the ultimate dream bite for anybody with an extreme sweet tooth!

Cookie Butter S'mores Dip
Serves: 10-12 Print
Ingredients:
1 bag (12 oz) white chocolate chips
½ cup semisweet chocolate chips
¼ cup cookie butter
about 20 marshmallows, halved
cooking spray (or unsalted butter)
graham crackers, for serving
Directions:
Preheat oven to 400 degrees. Spray some cooking spray (or dab butter) on a paper towel, and wipe down the bottom and sides of a 9 inch pie dish.
Spread white and semisweet chocolate chips over the bottom of the dish. Top with small dollops of cookie butter (about 1 tsp each). Spread marshmallows on top, cut side down. Bake for 6-8 mins until the marshmallows are golden brown on top. Serve immediately with graham crackers for dipping!
Recipe notes:
*I find the easiest way to halve marshmallows is to cut them with clean kitchen shears.
*The white chocolate will not completely melt leaving a nice texture to this dip. However, it helps to use a fresh bag of white chocolate. I find that older white chocolate seizes up a bit.
*White chocolate is very sweet. If you find white chocolate too sweet for your liking, we can flip flop the chocolate ratios here. And, this dip will be just as delicious. Use 1 cup semisweet chocolate and ½ cup white chocolate instead if you'd like.
