Cheeseburger Tacos

Cheeseburger in paradise…

Heaven on Earth with an onion slice.

Ok, now I have to finish it.

Not too particular, not too precise. I’m just a cheeseburger in paradise!

Whew, ok. Now that we got that out of the way….how’s everyone doing today?

Obviously, I’m feeling like a little songbird today. I’ve been getting my music groove on a lot lately.

You know it’s funny, but I usually have music on all day. I have a shower radio with rotating playlists that I listen to in the shower. I listen to the radio on the way to work. I have a little desk radio that’s set to a completely different station that I keep on in the background while I’m at work. Then, I listen to XM radio on the way home from work. I also leave the radio on for the doggies while I’m at work, so it’s on when I get home until I finish dinner and get ready for tv time.

But since all of this quarantine business started and my routine has drastically changed, it’s just recently hit me that I barely listen to any music anymore. I still get my shower music, but that’s kind of it. I don’t go anywhere to have car music. And for some reason, I chose to work in complete silence while working at home. Don’t ask me why. Weird right?

I think it all caught up to me at once, because for the past few days, I haven’t even turned on my tv. I ask Alexa to play various stations from XM radio, and I keep it on while I cook, work, eat, and scroll through the internet at night. I usually have tv on in the background when I’m working on blog stuff too, but nope. Not lately. It’s music, music, music. I hadn’t realized how much I’d missed bopping along to my favorite 80’s, 90’s, and 00’s mixes.

So, now that the music is back, it’s only fitting that we sing about today’s recipe.

Today, we’re making Cheeseburger Tacos!

This recipe is basically what would happen if a Big Mac and a taco had a baby. And, I’m totally digging it!

Let’s talk cheeseburger meat. We’re going to cook up some ground beef will all of the traditional burger flavors. And, I mean all of them. We need some onion. We need some worcestershire. And, we even need some good old ketchup and yellow mustard. All of these things get cooked with our ground beef to make the most flavorful burgerlike mix. And then, we’re going to melt some American cheese right into the meat. YUP! Finish it with a little sprinkle of sesame seeds since we’re not using a bun, and our taco meat is complete!

The best part of a Big Mac is the secret sauce, right? Well, I’ve got my own secrets. And, we’re making our own, Miracle Whip free version of that famous sauce today. A little bit of everything goes in this sauce, including some pickle relish. Most people can’t have a burger without pickles, so that’s where we’re incorporating ours. And for the record, I am NOT most people in the aforementioned scenario. Pickles are not for me. But, I have them here for you, and I can totally live with them when they’re hiding in the sauce!

Once we have the meat and the sauce made, all that’s left to do is assemble. Char some flour tortillas (there really is no other way), load up your taco with some lettuce and tomatoes (yes, I know there are no tomatoes on a Big Mac…don’t @ me), drop in some of that cheesy burger beef, and drizzle the whole thing in our yummy burger sauce.

C’est manifique!

This is everything you could want out of a burger/taco mash up. You’ve got yummy meat. You’ve got crunchy veg. And, you’ve got creamy sauce. And bonus tip, let’s say you want to switch things up with any leftovers. Bake up some french fries, and throw all of your taco components, minus the tortilla, on top. You’ll basically have burger french fry nachos, and could there be anything better?

Well, the tacos. But, you know what I mean.

Anywho, I’ll just be here being a cheeseburger in paradise singing my little vocal chords off if anyone needs me. I wouldn’t recommend eavesdropping, though. Just because I do sing doesn’t mean I should…

Oh well. At least I can cook! So, let’s eat!

 

Cheeseburger Tacos

Serves: 4 Print

Ingredients:

For the Secret Sauce:

  • ¼ cup mayonnaise

  • 1 ½ tbsp French dressing

  • 1 ½ tbsp sweet relish

  • ¾ tsp sugar

  • ½ tsp dried minced onion

  • ½ tsp white vinegar

  • ½ tsp ketchup

  • ½ tsp dijon mustard

  • pinch of salt

For the Cheeseburger Meat:

  • ½ tbsp olive oil

  • 1 lb ground beef (I used 85/15)

  • 1 tbsp dried minced onion

  • ½ tsp salt, plus more to taste

  • ¼ tsp pepper, plus more to taste

  • ¼ tsp garlic powder

  • ¼ cup ketchup

  • 1 tbsp yellow mustard

  • 1 tbsp worcestershire sauce

  • 4 slices American cheese, diced

  • 1 tbsp sesame seeds

To Serve:

  • 8 6-inch flour tortillas

  • 2 cups shredded lettuce

  • 1-2 roma tomatoes, diced

Directions:

  1. Make the Secret Sauce: Add all ingredients for secret sauce to a small bowl. Stir well to combine. Cover, and refrigerate for 1-2 hours before serving.

  2. Make the Cheeseburger Meat: Heat olive oil in a medium non stick skillet over medium high heat. Add ground beef, dried minced onion, ½ tsp salt, ¼ tsp pepper, and garlic powder. Stir well to combine, and cook until the beef is no longer pink. Remove from heat, and drain any excess grease from the pan.

  3. Return the beef to the stove top, and reduce the heat to medium low. Add ketchup, mustard, and worcestershire; and stir well to incorporate into the meat. Cook for 2-3 mins, stirring occasionally. Add American cheese, and cook, stirring constantly, until the cheese is completely melted into the meat. Taste for seasoning, and add another pinch of salt and pepper, if necessary. Stir in sesame seeds, and remove from heat.

  4. Assemble the Tacos: Evenly divide lettuce, tomatoes, and cheeseburger meat between taco shells. Top with secret sauce. Serve!

Recipe notes:

*I HIGHLY recommend charring your taco shells on the stovetop before you assemble your tacos. The char adds so much flavor! For a gas stovetop, place the tortillas right on top of the burner for a few second on each side. For an electric stovetop, heat a dry non stick skillet over high heat until it starts to smoke. Place the tortillas in the skillet for 20-30 seconds per side. You can do this in the same skillet that you plan to cook the eggs in. Just let it cool down first before you cook the eggs.

*If you're not serving all of these tacos at once, you can store the cheeseburger meat and special sauce separately in the fridge. Wait to char your tacos and assemble until you're ready to serve.

*If you want to switch things up a little bit, instead of serving these components in taco shells, you can also serve them over prepared french fries. It's equally as delish!

*Feel free to load up these tacos even more by adding raw onion and chopped pickles. YUM!
