Cheesy Truffle Garlic Bread

It’s still the month of my birth (for a few more hours), so things are getting decadent around here on The Yummy Muffin!

Yes, I’m a “celebrate all month” kind of gal, so get your party hats ready. We're living it up on the last day of my birthday month!

Do you guys have any food favorites that are a little more on the extravagant side but that you’ll never EVER turn down?

For me, it’s anything truffle.

True story: a couple of years ago, I was on a Disney cruise with my friends. And, we splurged and treated ourselves to a super fancy 7 course meal at the French restaurant at the top of the ship. It was truffle season, and the restaurant was running a special truffle themed menu (that was, of course, WAY out of our price range). Truffles are so rare, and they’re pretty expensive!

Anyways, there were 4 of us. So, we decided we’d just order one menu item and share it. We settled on a $75 plate of gnocchi in a truffle cream sauce with shaved truffles on top. The plate came out, and there were 3 gnocchi on that plate. THREE! To split between 4 women. It sure had to be a sight seeing four grown women in black evening dresses splitting 3 gnocchi and licking up every last drop of sauce.

And it was worth every last overpriced bite. All 3/4 of them…

Thankfully, there are so many truffle options out there that are so much more affordable than the $2500 white truffles I saw in Italy. There’s truffle butter, truffle honey, truffle salt, and so on. And those ingredients are what we’re using in today’s recipe.

Today, we’re making Cheesy Truffle Garlic Bread!

For such a decadent side dish, this one is really pretty quick and easy to throw together. Just a few quality ingredients will get us a life changing hunk of bread.

And, bread is already pretty life changing on its own.

We start with ciabatta rolls. I LOVE making garlic bread or breadsticks out of ciabatta rolls. They stay perfectly soft and fluffy on the inside while the outer crust gives us the perfectly crispy crunch. It’s baked bread heaven, in my opinion.

The bread gets brushed with a simple mix of melted truffle butter and garlic powder that seeps into the nooks and crannies of the airy bread. Truffle butter is pretty readily available now in your specialty grocery stores like Wegmans and Whole Foods. But, if you can find an Italian market in your neighborhood, you can usually find all kinds of truffle products for a pretty cheap price. And of course, there's always Amazon...

After our bread is buttered, we top it with some fresh torn mozzarella and shredded parmesan cheese. Pop it in the oven to get nice and golden, then do your best to slice the bread without drooling all over it.

This bread has everything you could want flavorwise. Gooey cheese, funky truffle, rich butter…it really is amazing. And, this isn’t just a great pasta side dish. It’ also amazing alongside some runny eggs for breakfast.

Alright guys, all this truffle talk is reminding me that it's also been a year ago today since I left for my favorite vacation, to date. If you need me, I'll be reminiscing with my pics in one hand and truffle garlic bread in the other!

Cheesy Truffle Garlic Bread

Serves: 8 Print

Ingredients:

  • 4 ciabatta rolls, cut in half

  • ½ stick (4 tbsp) unsalted butter, melted

  • 4 tbsp white truffle butter, melted

  • 2 tsp garlic powder

  • ½ cup freshly shredded parmesan

  • 4 oz fresh mozzarella, torn

  • ¼ tsp truffle salt

  • olive oil cooking spray

Directions:

  1. Preheat oven to 400 degrees. Line a large baking sheet with aluminum foil. Arrange ciabatta rolls cut side down on the baking sheet. Spray lightly with olive oil cooking spray. Flip over.

  2. In a small mixing bowl, stir to combine both melted butters and garlic powder. Brush butter mix on to each slice of ciabatta, covering the surface of each roll. Top with shredded parmesan and torn mozzarella evenly dividing between each roll. Bake for 10 mins. Switch the oven to broiler, and broil for 1-2 mins until the cheese starts to brown. Watch it closely so it doesn't burn! Immediately after removing from the oven, sprinkle each roll with a pinch of truffle salt.

  3. Let rolls sit for 5 mins before cutting. Using a sharp knife, cut each roll in half. Enjoy!

Recipe notes:

*You can store leftover garlic bread in the fridge for about a week. To reheat, place in a 375 degree oven for 7-10 minutes.

*You don't need to line your pan with foil, but it makes for easy clean up. So, why not?

*Pre-shredded parmesan cheese and grated parmesan in a can have a COMPLETELY different taste and texture than shredding/grating your own fresh cheese from a parmesan wedge. We need the fresh kind for this recipe so that it melts in the oven.
