Pineapple Mint Green Tea

Remember that time I kept an herb garden alive for 10 days?

Well, guess what? We’re at 24 days and counting, folks!

So, what better way to celebrate than by using some more of those herbs (that I haven’t killed yet) in today’s recipe!

Speaking of celebrate, can you believe that we’re just days away from celebrating the 4th of July? Like, when did that happen? How are we more than halfway through the year already?

I feel like things just started to warm up around here, and now we’re already on the decline down to colder days ahead. It’s INSANE!

But, I CANNOT think about that right now!

I’m in total sunshine mode these days. We’ve been really blessed with some fantastic (and HOT) weather around here lately. And, I’ve spent pretty much every non-working moment avoiding my grown up responsibilities and playing in the pool with my bestie and her kiddos. I’ve barely cooked any real food for myself. I certainly haven’t done any tidying up. But somehow, I remember to water those herbs twice a day to keep them alive.

I guess me practically living in the water has kept hydration front and center in my mind!

Though I haven’t really been feeding myself any real food, I have still been working on some totally yummy recipes for you. And, today is no different. Today’s recipe is perfect for those outdoor moments filled with sun and fun. It’s cool, refreshing, delicious, and equipped with some extra bonus tips!

Today, we’re making Pineapple Mint Green Tea!

Our ice cold beverage that we’re making today is perfect for those long summer days (and nights). And, it really couldn’t be much easier to throw together.

We start with some green tea bags. I’m not a caffeine drinker, so I went with caffeine free tea bags. But, the caffeination has no impact on the taste, so use whichever one strikes your fancy. Steep the tea bags in some boiling water for 5-6 mins, then get ready to add some flavor!

While our water boils, we’re going to work on a minty simple syrup. Take some fresh mint, some sugar, and some water; and bring them to a simmer over gentle heat. Let them simmer together for just a minute or two, then pour the whole situation right into your brewed green tea. The mint in this drink is nice and subtle. But, if you like a stronger minty flavor, feel free to add a few more mint leaves to your simple syrup. There’s no right or wrong answer, here!

The final ingredient to our sweet drink is some pineapple juice. You can use super fresh pineapple juice straight from the fruit, or you can use canned pineapple juice (which is a lot easier). I actually keep little 6 ounce cans of pineapple juice in my pantry at all times, because I use it in place of orange juice in recipes. Because, orange juice is GROSS! And, pineapple juice is not.

The pineapple juice brings a nice citrusy element to our tea without having the same old boring lemon flavor that we’re used to. The mint adds a nice and refreshing element to this tea that balances perfectly with the sweet and tart notes in this drink. This is really the only tea you’re going to want to be chugging this summer.

And, bonus recipe! You can make this tea a grown up drink by adding a little coconut rum to it. Add 1 little shot to every 6-8 ounces of tea, and you’ve got the perfect summer cocktail for those lazy pool days. And, double bonus recipe! Pour that little cocktail mix into freeze pop sleeves, and you’ve got a grown up icee to cool you down from the inside out!

Alright ladies and gents. It’s time for us to get back to reality for now so that we can get back to partying on Thursday! Make sure you make a double pitcher of this tea (and the adult freeze pops) to keep on hand during your celebrations this week (and pretty much the rest of the summer!!)

Pineapple Mint Green Tea

Serves: 10-12 Print

Ingredients:

  • 8 green tea bags (I use decaf)

  • 8 cups + 1 cup water, divided

  • ¾ cup sugar

  • 10-12 mint leaves

  • 1 ½ cups pineapple juice

Directions:

  1. In a large pot, bring 8 cups water to a boil. Once boiling, remove from heat and add tea bags. Steep tea bags for 5-6 mins. Remove tea bags, and set aside.

  2. Meanwhile, add 1 cup water, sugar, and mint leaves to a small pot. Stir to combine. Bring to a simmer over medium high heat, simmer for 1-2 mins. Set aside.

  3. Combine green tea, mint simple syrup (leave the mint leaves in the mix), and pineapple juice in a large pitcher. Stir to combine, and refrigerate until completely chilled. Serve!

Recipe notes:

*You can make this refreshing summer drink into a grown up one! For every 6-8 ounces of tea, add 1 shot (1.5 oz) of coconut rum. YUM! Double yum, pour this grown up concoction into freezer pop sleeves for some grown up icee pops!
