Strawberry Avocado Toast with Lemon Poppyseed Drizzle

I'm making good on a promise today, guys!
A couple of weeks ago, I told you I had an amazing Strawberry Avocado Toast recipe for you. Well, today is the day I finally share it!
I held on to this a little while longer than I originally planned, because I figured you guys might need a break from all of the strawberry and avocado we had during Cinco de Mayo week.
Not like anyone could ever need a break from strawberries or avocados. But, I gave it a little extra time just in case.
I don't usually do the grand reveal of what we're making til a few more random thoughts in to the post, but I've got something that I need to tell you guys. And, of course there's a story.
So, let's just get to it. Today, we're making Strawberry Avocado Toast with Lemon Poppyseed Drizzle!
First the story...so 2 weeks ago, I was in a position where I needed to take a drug test. (You don't have to be worried. I'll get to that part in a sec...) I had 2 different people tell me over the course of 24 hours not to eat poppy seeds. Well, even my subconscious must be a 5 year old rebel child; because, of course, I found myself in a position not more than a day after being told not to eat poppy seeds...eating poppy seeds.
And, it was a total accident! I was just snacking on some crackers and cream cheese when I looked down, realized I was eating a black speckled cracker, very dramatically threw the other half of the cracker, and tried to spit out what was in my mouth. I'm sure it was quite a scene. I, then, proceeded to spend 30 mins researching how long poppy seeds stay in your system. Thankfully, I was 4 days away from my drug test at this time, but still. Close call!
Moral of this story, as delicious as this toast is today, don't eat it within 24 hours of a drug test!
Second, the news...I had to take a drug test, because I got a new job!!! After 10 years with a company that molded me into the person I am today, I made the decision to take a leap of faith and pursue a new opportunity. And, this new job is pretty much a dream company for me. That's all I'm going to tell you for now. More details coming soon...after I start there next week.
Now, on to today's toast...
The key to any good avo toast is, well, the toast. For the bread, we're using a nice multigrain bread which gives us lots of healthy stuff and lots of surface area! Toast it to your liking, and get ready to build.
The toast get topped with some mashed avocado, some sliced strawberries, and some crumbled feta. This toast tends to sway on the sweeter side, so we really need the salty feta so we can feel like we're eating breakfast and not dessert.
The thing that ties this all together is the lemon poppyseed dressing. It's a quick mix of mayo, lemon, white balsamic, honey, and, of course, poppy seeds! The dressing is sweet, but tangy. And, the acidity from the lemon and white balsamic helps to cut the sweetness a bit. It goes so great with the slightly tart strawberries and the creamy, rich avocado.
This toast is perfect for breakfast, a lite lunch, or even a quick snack! It's really very filling, thanks to the avocado.
But remember, eat this every day but the day of a drug test! Silly poppy seeds...

Strawberry Avocado Toast with Lemon Poppyseed Drizzle Serves: 4 Print
Ingredients:
For the Lemon Poppyseed Drizzle:
2 tbsp mayo
1 tsp fresh squeezed lemon juice
½ tsp lemon zest (grated lemon peel)
1 tsp white balsamic vinegar
1 tsp honey
1 tsp poppy seeds
For the Toast:
4 slices whole grain bread, toasted
1 avocado, mashed
1 cup sliced strawberries
2 tbsp crumbled feta
Directions:
Make the Lemon Poppyseed Drizzle: In the small bowl, add mayo, lemon juice and zest, vinegar, and honey. Whisk to combine. Stir in poppy seeds. Set aside.
Assemble the Toast: Spread avocado evenly between each slice of bread. Top with strawberries and feta. Drizzle with Lemon Poppyseed dressing. Serve immediately.
Recipe notes:
*You can store the lemon poppyseed drizzle in the fridge for about 5 days if you don't want to eat all of these at once.
*To keep an avocado as green as possible after you've cut it, place plastic wrap directly touching any exposed flesh. Store in a plastic sandwich bag. This helps keep the air away from the avocado which is what causes it to brown.
*If you don't have white balsamic vinegar, you could substitute regular balsamic or apple cider vinegar. White balsamic is just a touch sweeter and a little lighter than regular balsamic.
