Day 8: Chocolate and Frito Dipped Chips Ahoy Thins

We're getting crazy today on Day 8: Chocolate and Frito Dipped Chips Ahoy Thins!
Ok, don't be scared.
I know these cookies sound a little strange. But, I'm telling you, everyone that's tried them have been pleasantly surprised!
This is one of those cookies that people will eat out of curiosity, if nothing else. But then, they'll realize how fantastic they are, and they'll keep coming back for more!
You guys have trusted me this far with my salty sweet combos, so I need you to keep the faith!
I like to use Chips Ahoy Thins as my base cookie. If you haven't noticed, I prefer the Thins version of most of the popular store brand cookies over the original. I just like the ratios better. And ratios are important to achieve the right balance with this cookie.
The Chips Ahoy Thins just get a half dip in some milk chocolate. It goes straight from the chocolate to be dipped in a bowl of crushed fritos. We let them dry on some wax paper, and we're done!
It's important to get the right texture on the fritos. We don't want whole fritos hanging off the cookie, but we don't want it so ground up in to crumbs that we can't identify what's on the cookie. We're going for a nice crushed texture.
Like I do when I'm crushing pretzels, I like to put the fritos in a freezer bag and bang the bag with a hammer. I do this for a few reasons: 1. It's a GREAT stress reliever! 2. It's fun. 3. I don't have to do extra dishes by cleaning out the food processor like most normal people do when they want to create a crushed/crumb texture.
Totally valid reasons, right?
The flavor of these cookies is so unique that you can't help but love them. The corn chips provide a salty and a crunchy element that seems like it was just made to be married to the sweet milk chocolate. The cookie is a soft kind of crunchy while the fritos are a hard kind of crunchy, but the balance there is perfect too. Even though that probably doesn't make any sense.

Chocolate and Frito Dipped Chips Ahoy Thins
Serves: 36 cookies Print
Ingredients:
1 pack Chips Ahoy Thins (original flavor)
2 cups milk chocolate chips
2 ½ cups fritos, crushed
Directions:
Melt chocolate in a microwave safe bowl according to package directions. Place crushed fritos in a separate bowl.
Line a large tray or baking sheet with waxed paper. Dip half of a cookie, 1 at a time, in to the melted chocolate until both sides are covered. Let excess chocolate drip off of cookie. Dip the chocolate side in to the bowl of frito crumbs. Press lightly to adhere the crumbs to the cookie. Place on the lined baking sheet.
Repeat until all cookies have been dipped. Enjoy!
Recipe notes:
*You could also use chocolate candy melts if you wanted to.
*We want the frito crumbs to have some texture to them. I like to put mine in a freezer bag, and beat them with a hammer. It’s therapeutic! You can also run them through a food processor if you don’t have any aggression to release, just don’t take it too far.
*We're only dipping half of the cookie, but we do want to make sure we get the front and back side.
