Frosted Coconut Snowballs

Oops, I did it again!

And, I did it on Day 11 in our 12 Days of Beverages challenge!

So, what did I do? Well, I took recipe inspiration from a candle scent.

Again...

But, for real. Is it my fault that Bath and Body Works names their candles the most delicious flavors? Even though they basically just recycle scents and slap a new, enticing name on their candles, I'm a total sucker for it. And, sometimes their candle names can literally make me drool.

And, that's how we ended up with today's recipe.

So today, we're making Frosted Coconut Snowballs!

This is basically a white hot chocolate made with coconut milk. Ok, that's actually exactly what it is. And, just like all of the other drinks we've made so far, this drink comes together very easily.

We start by heating some unsweetened coconut milk in a saucepan over medium heat. Now, we want to use a full fat coconut milk here and not a lite version in order to maximize the creaminess in this drink. After the coconut milk starts to simmer, we add some white chocolate chips, some coconut extract, and a dash of vanilla extract. The extracts really help to bring out the natural sweetness of both the coconut milk and the white chocolate. So, we don't need to add any additional sugar to this.

To really add to the ambiance of this drink, we're going to give it a coconuty snowball rim. We do that by dipping the rim of our glass into a little more melted white chocolate then rolling the rim around in some shredded coconut.

I mean, could these drinks be any more adorable?

I think not!

Frosted Coconut Snowball

Serves: 2 Print

Ingredients:

  • 2 cups unsweetened coconut milk

  • ½ cup white chocolate chips + ¼ cup, divided

  • ½ tsp coconut extract

  • ¼ tsp vanilla extract

  • ¼ – ½ cup unsweetened shredded coconut

Directions:

  1. In a medium saucepan, heat coconut milk over medium heat until the milk starts to simmer, stirring occasionally to prevent scalding. When the milk starts to simmer, add ½ cup white chocolate, coconut extract, and vanilla extract. Whisk well to combine. Once the chocolate has fully melted and incorporated into the milk, remove from heat.

  2. Melt ¼ cup white chocolate in the microwave in 15 second intervals until smooth. Pour on to a small plate. Place shredded coconut on another small plate. Dip the rims of your serving glass or mugs in the melted white chocolate, moving around to make sure the rim has a nice coating. Dip the chocolate rim into the shredded coconut, moving around to coat the rim. Pour hot chocolate into prepared glasses. Serve!

Recipe notes:

*For ultimate creaminess, use a full fat coconut milk and not a lite one.
